Catharina Sour and Pink Guava, Mandarin, Pitaya

Catharina Sour

The Catharina Sour style originated in 2015 in the Brazilian state of Santa Catarina, where Berliner Weisse was already quite popular. Local brewers thought: what if we combine the lightness and the acidity of this style with our local fruits? And so Catharina Sour was born – a beer with gentle, slightly milky sourness and an intense fruit-forward profile.

In our version, we went for fruits typical of South America and some we haven’t used in our beers before, including one fairly common and two less obvious, but all incredibly expressive and packed with flavor:

Pink Guava – juicy, sweet and sour, with notes reminiscent of pineapple and strawberries
Pitaya – known as dragon fruit, with a delicate flavor somewhere between melon and kiwi
Tangerine – brings bright citrus aromas and extra drinkability

The beer is fermented down to a low residual sugar level, so you won’t find the sweetness typical of pastry sours here. It’s dry, distinctly sour, light in body, yet bold in taste and extremely drinkable.

Water, barley malt, wheat malt, wheat flakes, pink guava puree, pitaya puree, tangerine juice, hops, yeast, lactic acid bacteria (Lactobacillus)
