We have created something completely different and very rare on the world beer map. We made the dark Imperial Saison age, for many months, in oak barrels of the Spanish oloroso sherry, which gave it the notes of grape must, red stone fruit and oak. Then, for a period of a few months, we added strains of wild yeast brettanomyces claussenii, which made the beer much drier and gave it the characteristic funky notes. We have tried to keep the balance in the beer, so its brett part does not prevail over the esters and the delicate candies of the Imperial Saison.
